Instructions
  1. Chop the spinach coarsely.
  2. In a large stockpot over medium heat, warm the olive oil. Add the green onions, dried onions and leek and cook, stirring, until they get translucent, about 3-4 minute.
  3. Add the spinach, the tomato and the rice and give everything a good toss and leave them to wilt.
  4. Then pour over 1 glass of water, season with salt and pepper and simmer for 20 minutes.
  5. Finally sprinkle with the dill and add the lemon juice, give a good toss and serve.
