  1. In a large stockpot, warm the olive oil over medium heat.
  2. Add the green onions and garlic and cook, stirring, until softened slightly, about 1 minute.
  3. Add the spinach leaves, packing them in the stockpot.
  4. Cover the pan tightly and cook. Stir once or twice, until all the spinach is wilted and tender but still bright green, 3 to 5 minutes.
  5. Remove from the heat. Add the vinegar and lemon zest and stir to combine.
  6. Transfer the spinach to a platter and sprinkle with sesame seeds.
