  1. Preheat your oven to 375º
  2. Add the eggs and sugar to a bowl and begin beating on a high speed.
  3. Sift a third of the flour over the eggs with the salt and begin folding it in. Continue adding the flour in thirds and folding until there it is well incorporated and smooth.
  4. Add the oil around the edges of the batter and begin folding this in. The batter will look broken but it will quickly come back together.
  5. Add the batter into the pans with a large spoon.
  6. Bake for 12-13 minutes, until the “bumps” have appeared and the cakes are golden. Transfer madeleines to a rack to cool for 15 minutes. Decorate with the powder sugar and serve!
