  1. Position a rack in the middle of an oven and preheat to 350°F. Lightly grease a 9-inch springform pan.
  2. In a large mixing bowl add the zest of the 2 grapefruits and the sugar. Using your fingers, rub the zest and sugar together until they’re well-incorporated.
  3. In a measuring cup, place the juice of half grapefruit and add the buttermilk (or yogurt) until there is a total of about 2/3 cup of liquid. Note, that you may not need the entire 1/2 cup of buttermilk (or yogurt), depending on the size of your grapefruit).
  4. Pour the grapefruit juice/buttermilk (or yogurt) mixture into the bowl with the zest and sugar and whisk well. Then add the eggs and olive oil and whisk well.
  5. In another bowl, sift together the flours, baking powder, baking soda and salt. Gradually stir the dry ingredients into the wet mixture, in the large mixing bowl.
  6. Pour the batter into the buttered and floured pan.
  7. Bake the cake for 50 to 55 minutes, until it is golden brown on top and doesn’t jiggle in the middle. Check by inserting a toothpick in the center. It should come out clean.
  8. Remove the cake to a rack and allow to cool for 15 minutes.
  9. For the glaze, squeeze the juice from the remaining grapefruit. Mix the brown sugar, confectioner’s sugar, and grapefruit juice together. Make sure the cake is cool before spreading the glaze.
